Braised Summer Squash and Mizuna & Beet Salad

Braised baby summer squash and mizuna salad with warm beets.

Halved the squash lengthwise and braised in olive oil, a pat of butter, salt and pepper.  They were delicious.

Zapped the beets to cook, peeled and sliced into the mizuna.  Nathan made a tasty honey mustard vinaigrette.
